Eating "fast food" that is made by you!

Facts:

  • I live a hectic life Ok.......well sometimes hectic but here and there I can unfortunately can be super lazy or just not have much motivation

  • I WANT to eat better

  • I waste a lot of money on take out food aka: Pizza, Pizza, Pasta dishes and what not

  • I really dislike fast food like McDonalds or Burger King

This is a big problem when it comes to eating well.......or ummmm better than I ususally do....

Do you feel like this happens to you???

Fast food......NO NO NO try to stay away from it......I think it is "OK" in a pinch but that is about it. For example, I was running on fumes from running errands and moving stuff from my house and had no food in site....so Wendy's it was. Ugh it was good at the time because I needed it, but I had other options I am sure :)

Anyway......in trying to save $$$$$ and not eat crappy for me food...I am taking my food by the proverbial horns and making changes!!!

I LOVE to cook, but since I am single it isn't as enjoyable to cook for just yourself as it can be cooking for others. And I am not as savy as my mom and grandmother when it comes to whipping something up from things that I "might" have in my cabinets.

Oh I have yet to master cutting recipes down.....so I make a ton of food that I get bored with too easily. Blah! So in trying to "better" my eating and cooking habits, I have been trying to find easy recipes online.

The other day I came across a GREAT super easy idea that I have been recently using at work and at home. I LOVE quick and easy food!

I got it from the Green Giant's Recipe Website BUT since I wasn't able to find their brand in my store for some odd reason, I made some adjustments.

OK so now for MY modifications

I bought:

2 bags of Bird's Eye Steamers Brown Rice

2 bags of Bird's Eye Steamers Southwestern Corn

1 package of totillas

1 bag of Cheddar cheese

1 can of black beans

This is what I did...

I heated up the rice and corn (separately) and then let them cool a bit

I then heated up the black beans

Tossed the tortilla in the microwave for 30 seconds or so

Took the tortilla, added the rice....then a small amount of cheese then the corn and black beans

Roll it up and VIOLA!

Ready it eat in just about 8 minutes or so.
